People have been trained not to expect or understand interoperability, and this provides a barrier for entry to any protocol with support from multiple clients.

Like it or not, right now it's helpful to users to have a unified brand, and it's probably easier for something like Delta Chat or Zom to succeed as a "get people to use better alternatives" approach than something like Thunderbird+Enigmail/K-9 Mail+OpenKeychain/whatever works for iOS (iPGMail?) or Gajim/Conversations/ChatSecure.
